Recipe of the week: Country sausage and fall veggies!

This weekes recipes combines ground pork, or some variety of country sausage with fall fruits and vegetables. It's a great, warming dish as the temperature starts to fall. As with most of my recipe's it's very simple and serves 2 people.

Country sausage and fall veggies:

Put olive oil and some garlic (perhaps 4-5 cloves) in a pan and sautee. Add either ground pork or your favorite variety of pork sausage (not breakfast sausage). Sautee until just short of browning. While that is browning take one sweet potato or yam, and one apple (your favorite variety) and cube into 1/2 inch cubes. Add apple and sweet potato/yam to pork and cover.

While that is cooking covered, finely chop sage and rosemary (1/2 teaspoon of each or to taste). Add these to your pan. Continue to cook covered until sweet potatoes are tender and easy to put a fork through.

The sage, rosemary and root veggies of sweet potatoes are a great taste of fall. Typically apples and sweet potatoes/yams are fall foods so you're eating in season too! This meal is rich in carbohydrates with the sugars in the apples and the starches in the tubers. If you're trying to lose weight you'll want to not make this too often. Conversely, if you're an athlete in training, this is a great carb rich dish. And, darn it, it's really tasty!!
